In the heart of a bustling California town, where the scent of fresh tortillas meets the whispers of dreams, a couple brought their vision of family, heritage, and hard work to life. Meet Johnny and Shy Valdez, the husband-and-wife duo behind Yani Mijo's, a vibrant Mexican food truck that’s as much about their journey as it is about their mouthwatering dishes.
Johnny, a proud Marine Corps veteran, spent his formative years serving his country as a machine gunner. His resilience and discipline carried over to an eight-year tenure with the Alexandria, Virginia Fire Department, where he saved lives and forged bonds. Later, as a security specialist in Baghdad, Iraq, he ensured the safety of others in some of the world’s most challenging environments. But amidst all these adventures, Johnny's heart remained tethered to his love for food. He studied culinary arts in Washington, D.C., mastering the craft he dreamed of sharing with the world.
Shy, his equally driven partner, served in the U.S. Army as a human intelligence collector, where she honed her skills in understanding people and their stories. After her military service, she became a private concierge for international diplomats in Washington, D.C., navigating high-stakes operations with grace. She later managed operations for FedEx, all while nurturing her lifelong passion for cooking—a love that began at just six years old in her family’s kitchen.
Both Johnny and Shy hail from California, where their roots run deep. Johnny's family from Mexicali, Mexico and Pacoima, California and Shy's from Guanajuato, Mexico and Redding, California instilled in them a rich culinary heritage steeped in flavor, culture, and tradition. These influences shaped the soul of Yani Mijo's, where they blend bold, authentic Mexican recipes with a touch of modern creativity.
As parents of five spirited children, Johnny and Shy wanted to create something that would not only provide for their family but also teach their kids the values of hard work, resilience, and community. Yani Mijo's became their labor of love—a food truck where every dish tells a story. From sizzling tacos inspired by Mexicali streets to rich stews reminiscent of Guanajuato's hills, their menu is a tribute to their heritage and life experiences.
